In a large frying pan, heat 1/2 tbsp oil over medium heat. Cook chicken for 5-10 mins, or until browned and tender. Remove from pan and cover to keep warm.

Add remaining oil to pan. Cook green onion, stirring, for 2 mins, or until soft. Add wine and bring to a boil. Reduce heat and simmer for 3 mins, or until liquid is reduced by 1/2. Add cream and bring back to a boil. Reduce heat and simmer for 2 mins, or until sauce is thickened slightly. Add horseradish, lemon juice, mustard and dill.

Meanwhile, in a large saucepan, melt butter over medium heat. Cook garlic, stirring, for 2 mins. Reduce heat to low and cook spinach, covered, for 2 mins, or until wilted.

Serve chicken and spinach drizzled with sauce.
