To prepare white sauce:

Melt butter, add flour and salt.

Whisk continuously for about 5 minutes or until you have a nice roux.

To prepare creamed spinach:

Melt butter in a pan, add onion.

Saute for 2 minutes.

Add spinach (frozen or thawed) and cook until spinach is thawed and warm.

Add white sauce and sour cream.

At this point, you can get really fancy and top with sliced provolone and tomatoes and stick under the broiler for a few minutes.

Note: I have used whole wheat flour to make the white sauce with no bad effects.
