1)Preheat oven to 300 degrees F.

2)In a medium pot, bring water and butter to a rolling boil.

3)Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. (Optional- if you want it sweet you can add in the sugar and vanilla at this time)

4)Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. (All the eggs should be encropperated)

5)Drop tablespoonfuls or pipe onto a parchment covered baking sheet.

6)Bake for 25 to 30 minutes, until golden brown (top should be very brown). Centers should be dry. (Using a skewer or chop stick punch a hole in the side)

7)When the shells are cool, either split or use a pastry bag to pipe in the filling (fillings can be whip cream or even mascapone cheese, whatever you like)
