Cream Of Parsnip Soup

   Prepare all your ingredients to have them ready to use.

   Chop the onion and cut the parsnips and potato in small pieces.

   In a pot add 1 tablespoon of olive oil and saute the onion for 5-6 minutes.

   Season it with salt and pepper.

   Add the parsnips and the bay leaves and stir for 2 minutes and then add the potato.

   Pour the stock and bring the soup to a boil.

   Simmer it until the potato and parsnips are cooked through.

   When the vegetables are cooked, let the soup sit for 10 minutes and then blend it until you reach the desired consistency.
