Preheat oven to 375 F.

In a bowl add streusel ingredients. Mix together until crumbly and then set aside.

In a separate bowl, mix together dry ingredients for the muffins (flour, sugar, baking soda, salt). In another bowl (geesh, there's a lot of dirty bowls here) mix the wet ingredients in the order listed: eggs, buttermilk, melted butter, vanilla and lemon zest (use a rasp).

Mix the wet with the dry (not too much) and sprinkle the cranberries on top. Mix all together until just moistened. don't overdo it!

Spoon batter into a paper-lined 12-count standard size muffin tin and top with streusel. Oh ya! Put it in the oven and bake for 25 minutes, and then they're done!
