Cranberry Orange Glazed Cornish Hens

   Rinse hens, pat dry.

   Coat inside and outside of hens with melted butter, sprinkle with salt and pepper.

   Place hens, breast side up, on a rack in shallow roasting pan.

   Insert meat thermometer.

   Cover loosely with foil.

   Roast in 375 degree oven for 30 minutes.

   Uncover and roast one hour or until thermometer reads 185 degrees.

   Meanwhile, for sauce, in a one quart saucepan, combine cranberry sauce, orange marmalade, lemon juice, minced onion and corn starch.

   Cook and stir until thick and bubbly. Cook and stir 2 more minutes.

    Remove from heat, stir in orange sections.

    Brush sauce on hens several times during last 20 minutes of roasting.
