Cook one of those couscous mixes that already has a bit of seasoning.

Meanwhile, cut zucchini into spears, and peel onions then halve lengthwise and cut halves lengthwise into 1/2-inch-wide rings.

Soak toothpicks 10 minutes in water. Insert 1 wooden pick through each wedge to hold layers together, then put onions in a large bowl with zucchini and corn on the cob if taking the risk. Toss vegetables with 2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. A little more if using corn.

Using a saute pan placed on aluminum foil on the grill. Heat vegetable oil then add chopped pepper(s),and broccoli and season with salt and pepper.

Grill zucchini and onions. And corn on the cob if using.

Next remove corn from the cob into dish, remove toothpicks & chop grilled red onions smaller, and add rest of vegetables. Basically whatever you really like.

Then crush feta cheese and sun dried tomatoes over cooked couscous.
