Preheat the oven at 175oC.

Grated courgettes should be slightly salted (crumbled feta will be added later on) and left for 15 minutes in a colander to drain any excess water.

Brush an oval glass dish eith the olive oil and scatter evenly on all surface some breadcrumbs.

Mix together the finely sliced dill, curled parsley and spring onions with the dried mint, crumbled feta, cottage cheese, eggs, the remaining breadcrumbs and pepper.

Squeeze grated courgettes to drain any excess water.

Mix with the rest of ingredients.

Pour the mixture in the dish and drizzle with the remaining olive oil.

Bake for 45 minutes or until golden.
