Courgette spaghetti with meatballs recipe

   Heat the oven to 200C/fan 180C/gas mark 6.

   Line a baking tray with non-stick baking parchment.

   Add the meatballs and cook for 20-25 mins until cooked through.

   Meanwhile, spray a pan with oil.

   Add the garlic and cook for 1 min, stirring.

   Add the cherry tomatoes and cook for 3 mins until they soften.

   Add the wine and bring to the boil.

   Reduce the heat, add the capers and olives and simmer for 5 mins.

   Add the cooked meatballs and simmer for 2 mins.

    Using a julienne peeler or spiralizer, slice the courgettes into long spaghetti.

    Spray a large frying pan with oil and set over a medium-high heat.

    Add the courgettes and cook, stirring for 1-2 mins, until wilted.

    Spoon onto two plates, top with the meatballs and sauce, and serve sprinkled with the parmesan.
