Ingredients: 1 c. uncooked rice; 1 c. celery slices; 3/4 c. chopped onion; 2 tsp. parsley flakes; 1/2 tsp. salt; 1 1/4 c. water; 1/8 tsp. pepper; 1 (10 3/4 oz.) can condensed cream of mushroom soup; 3/4 c. Miracle Whip salad dressing or light reduced calorie dressing; 3 chicken breasts, split and skinned (legs and thighs may be used)

Place rice in greased 13 x 9-inch baking dish.

Cover with combined vegetables and seasonings.

Combine soup and salad dressing; mix well.

Gradually add water to soup mixture, mixing until well blended.

Pour half the soup mix over vegetables.

Top with chicken and remaining soup mix.

Bake at 350u00b0 for 1 hour or until chicken is tender and rice is cooked.

Sprinkle with paprika, if desired.
