Preheat oven to 400 degrees.

Lightly coast fingertips with olive oil, press and stretch dough evenly on pizza pan/stone until about 10-12 inches in diameter.

In saucepan, heat 1 tablespoon olive oil, add garlic and cook until golden. Brush garlic mixture over dough.

Sprinkle oiled dough with half of mozzarella cheese. Bake 10 minutes at 400 degrees.

Combine parsley, Parmesan cheese and oregano. Remove pizza from oven and drop natural lowfat cottage cheese in 8 rounded piles in a circular pattern onto pizza. Sprinkle with Parmesan mixture. Top with tomato slices. Sprinkle remaining mozzarella cheese over the top. Bake 10 minutes longer.

Remove from oven and add fresh basil and spinach leaves last to avoid burning. Cook for 5 more minutes and serve.
