Ingredients: 2 lbs boneless and skinless chicken breasts; 1 Tbsp curry powder; 2 Tbsp tomato paste; 1/4 tsp Siracha (more or less, to taste); 2 oz red wine; 4 oz whipping cream; 1 bay leaf; juice of 1/2 lemon; 1/2 cup cashews; 1/2 cup golden raisins (Sultanas?); 4 dried apricots, chopped; 1/2 cup Miracle Whip (added at end)

2 lbs boneless and skinless chicken breasts
1 Tbsp curry powder
2 Tbsp tomato paste
1/4 tsp Siracha (more or less, to taste)
2 oz red wine
4 oz whipping cream
1 bay leaf
juice of 1/2 lemon
1/2 cup cashews
1/2 cup golden raisins (Sultanas?)
4 dried apricots, chopped
1/2 cup Miracle Whip (added at end)

Poach the chicken (cover with water, bring to boil, turn off heat, cover with lid, let rest for 20 minutes, then pour off water). When cool, cut into bite sized pieces.

Place the remaining ingredients (except for the Miracle Whip) into a sauce pan, and simmer for a few minutes.

Remove the bay leaf. When cooled, add the 1/2 cup (or more) of Miracle Whip (Light?).

Mix with the chicken pieces. Cool in the fridge for at least 4 hours.

If desired, garnish with mango, fresh apricots, cashews, etc.
