In a mixing boil combine corn kernels, sugar, salt, pepper and diced red pepper. Stir in egg yolks, one at a time. Fold in flour. In a clean bowl beat the egg whites until stiff. Fold into the batter. In a large cast iron skillet heat oil over medium heat; gently drop in heaping tablespoons of the batter to make around 12 fritters.

Fry fritters to golden brown turning to cook evenly; allow two minutes frying time for each side so that the fritters are puffed up and cooked through; using a slotted spoon transfer onto paper towel. Drain well and serve hot.
