Cold Green Bean Salad With Pancetta

   Wash and trim the ends of the green beans. Blanch and set aside.

   In a lightly-greased frying pan, cook the pancetta on medium-high for 5 minutes, or until crispy. Spoon pancetta onto a paper towel to absorb excess grease.

   In a large mixing bowl, toss the beans together with the olive oil, vinegar, shallots, salt, pepper, and pancetta. Serve room temperature or chill to serve cold.
