Preheat the oven to 325u00b0F. Grease and line a baking pan with parchment paper. Mark two 2 1/2-inch circles on paper.

Beat egg whites in a medium bowl with electric mixer until soft peaks form. Gradually add sugar, beating until dissolved between additions. Fold in sifted flour, coconut extract, butter and lime peel.

Drop one level tablespoon of mixture into center of each circle on baking pan; spread evenly to cover circle completely. Sprinkle with a little coconut. Bake about 5 mins.

Working quickly, loosen cookies from pan. Place message in the center of cookies; fold in half then gently bend cookies over edge of a glass. Cool 30 seconds. Transfer to wire rack to cool.

Bake two cookies first, but have another pan ready to go into the oven when you remove the first two. Repeat with remaining cookie mixture and coconut.
