Preheat oven to 400.

In saucepan, whisk 2cups of the milk and 3/4cup of sugar together.

Bring to a simmer over medium heat.

In a bowl, whisk egg yolks together.

Temper hot milk into yolks.

Whisk egg mixture into milk in pan.

In a small bowl, dissolve cornstarch in remaining cold milk, making a slurry.

Whisk slurry into hot milk mixture.

Bring to boil and reduce to simmer.

Cook, stirring constantly, until thick.

Fold in vanilla, coconut, and butter.

Mix well.

Pour filling into pie shell.

Cool.

Using mixer, whip egg whites to soft peaks.

Add remaining sugar, whip to stiff peaks.

Spread whites over pie.
