Coconut Cookies With Honey And Oats

   Preheat oven to 180 degrees Celsius

   Line a baking tray with small, paper, baking cups (about 30).

   Set aside.

   In a bowl, beat the eggs well with a whisk.

   Add coconut, sugar, honey, and oats. Stir with a spoon until the mixture is perfectly homogeneous.

   Mix in the blender for about 15 seconds on a high speed. Scrape sides of blender, and mix again for 15 seconds.

   Spoon out 1 tablespoon of dough into each of the baking cups.

   Bake for 20 minutes, until golden. Remove from oven, and while cookies are still hot, brush with jelly.
