In a 3-quart saucepan, stir together two cups powdered sugar, corn syrup, and margarine. Over medium heat and stirring constantly, bring to a full boil. Stir in remaining powdered sugar. Remove from heat and allow to cool for five minutes.

Stir in vanilla and food coloring. Beat mixture with a wooden spoon until it has thickened slightly. Stir in the coconut just until blended. Using two teaspoons, drop by rounded teaspoonfuls onto waxed paper. Press three jelly beans into the center of each to form a bird nest with eggs. Let set to harden.
