Spoon fat from turkey drippings and set aside 5 Tbsp. in a small bowl (discard the remaining fat). Measure defatted turkey drippings and if needed, add enough chicken broth to equal 3 1/2 cups.

Heat reserved turkey fat in a large saucepan over medium heat. Add shallots and sage; cook, stirring occasionally, until slightly softened, 2 to 3 minutes. (Reduce heat if shallots start to brown.)

Add flour and cook, stirring, 2 minutes. While stirring, pour in turkey drippings (and chicken broth, if used). Bring mixture to a boil, stirring, and cook until slightly thickened, 2 to 3 minutes.
