Spray an 8 inch round cake pan with nonstick spray and set aside.

Combine flour, 1/2 cup sugar, baking powder, and salt in a large bowl. Then put in the pieces of butter. Mix in food processor until it forms course crumbs. Gently stir in 1 cup cream just until mixture forms soft dough. KNead lightly in bowl (eight to ten times) then gently pat into your prepared pan. Bake twenty minutes or until golden and toothpick inserted in the center comes out clean. Cool completely on a wire rack.

Don't worry if it hasn't risen much. It's supposed to look like a giant thick cookie if that's what it looks like. It looks quite nice when all of the decorating is done. I actually drew a picture of it but I don't know how to upload the darn thing.

Meanwhile, toss berries with one tablespoon sugar; set aside. Beat remaining one cup cream with remaining one tablespoon sugar in a large bowl with electric mixer on high until soft peaks form; reserve 1/4 cup.

To serve, slice cake in half, horizontally, Arrange bottom layer of cake on serving platter. Evenly top with berries, reserving some for garnish, then top with whipped cream. Top with remaining cake layer, then garnish with reserved cream and berries.
