To begin, put the 5 cups of water in a bowl and put the yeast in as well.

Stir until the yeast is dissolved and the water looks cloudy.

Stir 6 cups flour in with the yeast, always stirring in the same direction.

After that let the mixture sit for 2 hours, and it should be covered.

The mixture will have grown.

Gently stir it, then add in the sugar and salt and mix it in.

Add 6 more cups flour, one cup at a time.

When the dough becomes far too difficult to stir with a spoon, put in on a well floured workspace.

Knead the dough for about 10 min.

Add more flour as needed.

After the 10 min the dough should be smooth and elasticky.

Place the dough in an oiled bowl and allow it to sit for 1 1/2- 2 hours.

The bowl should be coverd with plastic wrap.

After letting it sit it should have doubled in size.

Put it on your workspace and roll into a square about 24 inches long.

Rub the oil all over the top surface of the dough and then lightly sprinkle the sugar and then the cinnamon.

Roll the dough up so it looks like a big roll and cut it in to about 24 equal pieces, (about 1 inch in length for each roll).

On parchment or a lightly greased baking sheet lay out the rolls and cover them with plastic wrap, then allow them to rise for 30 min.

While this is happening, preheat your oven to 400 deg F.

After the 30 mins the rolls should have risen some.

Place them in the oven and allow to cook for 35 to 40 min.

If you want a nice soft top, place a cotton cloth on top of them for about 10 min.
