Cut a thin slice from the bottom of each pear, to create a level bottom. Combine wine, granulated sugar, cinnamon and vanilla bean in a pressure cooker. Stir until sugar dissolves. Add pears, standing upright.

Close the pressure cooker. Bring up to pressure following manufacturer's directions (until steam escapes at a constant rate and there is a regular hissing sound). Cook on high for 6 mins.

Release pressure following directions. Let stand for 10 mins. Remove lid. Transfer pears to a plate. Cover with foil to keep warm.

Transfer cooking juices to a large saucepan. Add brown sugar. Stir on medium heat until dissolved. Bring to a boil. Boil for 4-5 mins, until syrupy. Pour sauce over pears. Serve with whipped cream or ice cream.
