Transfer the mixture to a large bowl and stir in half the sifted flours and baking soda and half the buttermilk, then stir in the remaining flours and buttermilk. Spread into the prepared pan and sprinkle with cinamon topping. Bake for about 50 mins or until a skewer inserted in the center comes out clean. Cool in pan for 5 mins before turning on to a wire rack to cool completely.
