Cider Pears With Custard

   Whisk the yolks, sugar, milk, and vanilla beans together and place in a saucepan on low heat, stirring constantly until thick enough to coat the back of a wooden spoon. Cover with plastic wrap directly touching the surface and set aside.

   Place the pears into a saucepan along with thte cider, sugar, and cinamon. Bring to a boil and simmer for 30 minutes, or until tender. Let cool in the syrup.

   Remove the pears from the syrup and cook the syrup to reduce and thicken.

   Serve with the syrup and custard on the side.
