whisk flour salt and baking powder in a bowl.

Cream butter and sugar well, add egg,flour mixture and mint extract. When all incorporated add food coloring a little at a time until you are pleased with the shade of green.

Place dough into a cookie press with the tree disc and press out on a cookie sheet. If dough is too soft, refrigerate for an hour or so until able to hold the shape from the press.

Sprinkle with green sugar.

Bake 10 to 12 minutes until edges are just minutely brown.

Cool on wire rack and keep in a sealed container. Will keep in a cool place for weeks.

I like to melt white chocolate and drizzle over baked cookie.
