Divide batter evenly between prepared pans and bake for 12 mins, or until a skewer inserted in the center comes out clean. Let cool in pans for 10 mins then invert onto a wire rack and let cool completely.

Beat cream cheese with whipped cream until smooth. Add caramel sauce, sugar, and remaining cinnamon. Beat until smooth.

Spread frosting over top of 2 cakes then stack together. Stack third cake layer on top. Transfer remaining frosting to a pastry bag fitted with a star tip and pipe decorative swirls 1 inch from the edge of the cake. Garnish with apple slices and mint.
