Chocolate Mousse With Plantain And Berry Jam

   In a saucepan, melt together the chocolate and milk. Once melted, remove from heat and whisk in the butter.

   Separately, beat the egg yolks and sugar together. Add this to the chocolate.

   In another bowl, beat the egg whites into stiff peaks, adding a little salt so it does not fall.

   Fold the egg whites into the chocolate mixture.

   Pour the mousse into individual glasses and refrigerate until set. Garnish with plantain and berry jam.
