Pour chocolate into saucepan and cover with 2 inches of hot tap water.

Cover with lid and let stand 3 to 5 minutes. Chocolate should be soft.

Drain off water.

Add the egg yolks; stir with a whisk and cook over low heat until it thickens. Remove from the heat.

Add the butter, vanilla and brandy.

Set aside to cool.

Beat the egg whites until they form soft peaks. Add sugar slowly while beating with electric mixer at high setting.
