Chocolate Covered Cherry Cookies

   In a medium bowl, beat butter with mixer on medium high speed for 30 seconds.

   Add sugar, cocoa, baking soda and baking powder; beat until combined.

   Add the beaten egg and 1 tablespoon reserved cherry juice; beat about 30 seconds.

   Slowly beat in as much flour as you are able with the mixer and stir in any remaining flour with a wooden spoon.

   Shape a scant teaspoon of dough around each cherry.

   Place each in a 1 inch paper or foil baking cup.

   Place 1 inch apart on ungreased cookie sheets.

   Bake in a 350 degree oven for 10-12 minutes or until the top looks dry.

   After they have cooled, top with melted chocolate or your favorite chocolate glaze.

    Top with sprinkles if desired.
