Combine whipping cream and milk in a large mixing bowl, or large glass measuring cup. Microwave for 3 minutes, stirring at one-minute intervals. Place blade attachment into food processor and add sugar, cocoa powder and bittersweet chocolate. Pulse for about a minute, or until chocolate is chopped fine. Add vanilla into cream mixture and pour into processor while running at a low speed. Process until mixture is well combined and chocolate is melted, 30 seconds to a minute should get it. Pour mixture into a bowl, cover and refrigerate for 30 minutes. Pour chilled mixture into an ice cream maker. When ice cream has started to freeze, stir in cinnamon chips. Continue to process until frozen. Store in an airtight container until ready to serve.

If you prefer smooth ice cream with no crunch, add the cinnamon chips in with chocolate and they will melt, but you'll have all the cinnamon and chocolate flavors.
