Take both eggs and separate out just the egg whites into a medium to large bowl. Beat the gg whites with an electric hand mixer until they are foamy.

Add salt, cream of tartar, vanilla, and nutmeg. Beat the mixture again until it holds soft peaks.

Add the sugar, gradually, beating the batter until it is stiff (holds strong peaks). No need to use the full 3/4 cup of sugar - they're plenty sweet.

Fold in the chocolate chips with a spoon. Make sure the chocolate chips are evenly distributed throughout the foamy meringue.

Spoon batter onto parchment paper-lined baking sheets (or greased baking sheets). Bake for 25 minutes at 300 degrees F.

Watch clostey and pull out of the oven when the undersides of cookies are golden or lightly tanned.

Cool for at least 5 minutes before trying to move them as they will likely melt in your hand!

Note: there are two approaches to baking meringues. This shorter cooking time at a higher temperature yields a cookie with a crackly, crumbly exterior and an almost hollow center. A more traditional approach is a longer baking time, 200 degrees for 1.5 to 2 hours. Take the longer-baked version out when they are slightly golden and firm to the touch. They will be more soft and fluffy, like miniature pavlovas.
