4 Tablespoons Instant Coffee Granules, Divided
1/2 cups Unsalted Butter

1/4 cups Light Brown Sugar
1 Large Egg
1 Tablespoon Water

1 cup Chocolate Chips
FOR THE DRIZZLE:
1/2 teaspoons Instant Coffee Granules
1 Tablespoon Water
1/2 cups Icing Sugar

For the cookies:

Preheat the oven to 180u00b0C (350u00b0F or Gas 4). Line a baking tray with parchment paper, or a silicone mat. Set aside.

Whisk together flour, baking powder, cornflour, baking soda, salt, and 2 tablespoons of instant coffee granules. Set aside.

Microwave butter for 40-60 seconds, to almost melt it all. Whisk in the sugars until combined. Add egg and mix until combined. Dissolve remaining 2 tablespoons coffee in 1 tablespoon of water, then add to the wet ingredients. Mix until combined.

Add the dry ingredients, and mix until just combined. Fold in chocolate chips.

Using a medium cookie scoop, scoop out 14 to 16 dough balls, then place on the prepared baking tray. Bake for 8-10 minutes. Allow to cool on the baking tray for 10 minutes before transferring to a wire rack to cool completely.

For the drizzle:

Dissolve the coffee granules in the water. Add icing sugar and mix until smooth. Drizzle over the cooled cookies.
