For chocolate cream, gently warm 3 cups cream in a saucepan, remove from heat and add 14 oz dark chocolate, stirring until melted. Transfer to a clean, dry bowl and allow to cool for at least 3 hours, until cooled completely.

Preheat oven to 400u00b0F. Line a 13x15 inch rimmed baking tray with parchment paper. Whip egg whites and 4 tbsp cold water until stiff, gradually adding sugar. Add yolks, 1 at a time. Sift in flour, cornstarch, cocoa powder and baking powder and fold in. Transfer to prepared pan, smooth and bake for 10 mins, or until a skewer comes out clean. Turn out onto a wire rack, discard parchment paper and allow to cool.

Cut cake in 1/2 horizontally and sprinkle with whiskey. Whip chocolate cream for 1 min until creamy. Spread 1/3 over the bottom cake and gently press the other cake on top. Chill for 30 mins. Spread remaining chocolate cream over top and sides of cake and chill for at least 3 hours.

Meanwhile, gently melt coconut oil, remaining cream and dark chocolate over a double boiler. Allow to cool slightly then spread over cake. Chill for 1 hour.

To finish, melt white chocolate over a double boiler. Transfer to a piping bag and pipe a celebratory message on top. Allow to cool and set.
