Chocolate Butter Cookies

   Preheat oven to 375 degrees.

   In a large bowl or mixer bowl, combine all ingredients EXCEPT the flour and cocoa. Beat well until fluffy. Add flour and cocoa; mix well. Shape into 1-inch balls and flatten with your palm or the bottom of a glass. Place onto a parchment-lined cookie sheet about 1 inch apart and bake for 7 to 9 minutes. Cool on a wire rack and dust with powdered sugar.

   Note: you can change the extract from almond to orange and even peppermint.
