Work quickly to get a sandy mixture, don't worry if you still have some butter lumps. Add a tablespoon of ice water at a time and keep working until you get a smooth and elastic dough. Wrap in plastic wrap and place in the refrigerator to rest for about one hour.

Wash the apples and remove the core. Cut into thin slices, spraying with lemon juice to prevent oxidation.

Place the dough between two sheets of parchment paper and roll it out in a uniform and circular shape, about 4 mm thick. Arrange the slices of apple next to each other forming a compact and circular design, leaving about 3 cm from the edge. Sprinkle the nuts and raisins mixture on top. Fold the edges inward, making small folds.
