Chinese Cucumber Salad

   Slice cucumbers into bite-sized pieces. Add sugar and salt, mix and let rest in the fridge. (Adding salt helps take out the water in the cucumbers , making it more crunchy.

   To make the sauce: Combine all the sauce ingredients and taste. It's very flexible. You may even want to add some chili pepper flakes, pepper etc. Be creative!

   Take cucumber out and drain away all excess water. Combine with sauce and keep cool in the fridge until ready to eat.

   Tip: It tastes better after sitting in the sauce for longer, so doing this in advance is a great idea!
