Sprinkle the gelatin over 1/4 cup of cold water in a small bowl and stir. Place the small bowl into a larger bowl of warm water, and stir until gelatin dissolves. Meanwhile, beat the egg yolks, sugar and vanilla extract until light and foamy. Mix in the lemon zest, lemon juice.

Mix 1 tbsp lemon cream into the gelatin to loosen it then stir it back into the lemon mixture and mix well.

Beat the egg whites until stiff. In a separate bowl, beat half of the cream until stiff. Fold the cream into the lemon mixture, then carefully fold in the egg whites. Portion into serving containers and chill until ready to use. Whip the remaining cream until stuff and use to decorate the desserts. Add a rolled wafer cookie before serving.
