1/2 cup flour
2 tsp. baking powder
1 tsp. salt
1/2 cup melted butter
8 oz. chopped green chili
peppers or canned (mild)
1 pint cottage cheese
1 lb. monterey jack cheese
(shredded)

Preheat oven to 400 degrees.

Beat eggs lightly in large mixing bowl, add flour, baking powder, salt, and mix well. Add melted butter, chili peppers, cottage cheese and monterey jack cheese. Mix until well blended.

Lightly spray 2 pie plates with cooking oil. Bake at 400 degrees for 15 minutes then lower the temperature to 350 degrees for approximately 30-35 minutes or until the center is set.
