Place the ground beef in a bowl with the onion, egg, tomato and chili sauce and paprika. Season to taste with salt and freshly ground black pepper and knead to combine.

With wet hands, shape into sausage shapes approximately 4 inches long.

Heat 1 tbsp of the oil in a pan and brown the meat for 3 mins, turning. Remove from the pan and set aside.

Add the remaining oil to the pan, add the potatoes and fry, stirring occasionally, for 20 mins over medium heat. Season to taste with salt and freshly ground black pepper.

Place beef 'sausages' into the pan with the scallions and sun-dried tomatoes, on top of the potatoes. In a bowl, mix the remaining eggs with the milk and the dried oregano and pour egg mixture over all into the pan. Cook for 15-20 mins covered over medium-low heat. Serve with the tomato salsa, if liked. Garnish with the reserved scallions and fresh oregano, if desired.
