Chicken With Creamy Dill Mushrooms & Leeks

   Over Med - Med High heat, heat 1 TB olive oil in non-stick pan. Salt and Pepper chicken to taste. Bread chicken breasts. Saute approximately 2-3 min per side, until nicely browned. While chicken is sauteing, chop mushrooms and leek. Remove chicken from pan to. Add remaining olive oil if needed and saute leek and mushrooms until tender. Add chicken broth and increase heat to high and reduce to half of volume. (A splash of white wine doesn't hurt either, if you have a bottle open.) Remove from heat. Stir in Creme fresh and dill. Add pepper medley to taste and adjust salt, if needed. Serve sauce over chicken. We like to plate with chicken on a bed of rice with sauce over top. Great with roasted asparagus.
