1 red chili sliced into rings
4 taco shells
1 tablespoon olive oil
1 pound chicken breast cut into bite-size pieces
1 red pepper deseeded and chopped
1 mango peeled, stoned and chopped
1 ounce parsley
3 leaves
4 lettuce leaves curly, torn

Preheat the oven to 350u00b0F. For the guacamole, place the avocado in a bowl with the lime juice, onion and garlic. Blend until smooth using a stick blender. Stir the chili through the mixture. Season to taste with salt and freshly ground black pepper.

Bake the taco shells for 3-4 mins.

Heat the oil in a frying pan, add the chicken and stir-fry for 5 mins. Add the pepper, mango and chopped parsley and cook for another 3 mins. Season to taste with salt and freshly ground black pepper.
