Chicken Spectacular – a delicious recipe with mayonnaise, chicken, Uncle Ben's, pimento, cream of celery soup, onion. Easy to follow and perfect for any occasion.

3/4 c. mayonnaise
5 c. cooked, chopped chicken
1 pkg. Uncle Ben's long grain and wild rice
1 (8 oz.) jar pimento
2 (10 1/2 oz.) cans cream of celery soup
1 large onion, grated
2 (16 oz.) cans French-style green beans, drained
1 (6 or 8 oz.) can sliced mushrooms
1 (4 oz.) can water chestnuts, sliced or diced
salt and pepper to taste
canned seasoned crumbs

Mix all ingredients and pour into two 8 1/2 x 8 1/2 x 2-inch casseroles.

Bake for 30 minutes at 350u00b0.

This freezes well. Serves 10.
