Chicken & Olives Recipe

   Brown chicken pcs in a small amount of oil - set chicken aside.

   Slice the onions and cook in chicken drippings to transparent.

   Chop tomatoes.

   Add in to onions along with parsley and basil and wine.

   Simmer 15 min.

   Then put chicken pcs, olives and mushrooms in the sauce and simmer 30 min or possibly till chicken is done.

   Salt and pepper to taste.

   This is excellent served over rice.
