Ingredients: 6 chicken thighs; 1 qt. water; 2 pkg. Ramen noodles; 1/4 c. oil; 2 cloves garlic, minced; 1 medium onion, chopped; 1 c. thinly sliced carrots; 1 c. sliced celery; 2 c. chopped cabbage; 1/4 c. chicken broth

Debone chicken. Cut meat into bite size pieces. (Save skin and bones for broth.)

Bring water to a boil;

add noodles.

Set aside flavor packets.

Cook noodles 2 minutes. Drain and set aside.

In large skillet over medium heat, stir-fry onion and garlic until onion is clear. Add chicken and stir-fry until chicken is cooked, about 6 minutes.

Push to side of pan. Add to center of pan the carrots, celery and contents of flavor packets. Stir-fry 2 minutes.

Add cabbage and stir-fry all ingredients about 2 minutes. Add noodles and broth, stirring until heated through, about 2 minutes. Serve with chow mein noodles as garnish.
