Servings: persons

1/2 c. soy sauce
2 cloves garlic, crushed
1 med. onion, roughly minced
1 teaspoon grated green ginger
2 tbsp. minced fresh chives
3 lbs. chicken wings
Minced parsley (garnish)
Salt and pepper
1 teaspoon sugar
4 tbsp. dry sherry
1 tbsp. oil

In a mixing bowl, combine all ingredients, except chicken.

Wash and dry chicken wings.

Cut off the wing tips at the joint.

Remove the thinner bone from the wing.

Scrape down the chicken flesh on the remaining bone to the end to make a drumstick shape.

Add in chicken to marinade.

Cover and chill for 2 hrs, stirring occasionally.

Place chicken in a baking pan.

Strain marinade over chicken and bake in a preheated 350 degree oven for 30 min or possibly till tender, basting occasionally with marinade.

Remove chicken from pan and brush with pan juices.

Serve on a platter; sprinkle with parsley.
