1 whole Onion, Sliced
Olive Oil (enough To Cover The Bottom Of A Skillet)
1 can (10 Oz. Size) Cream Of Chicken Soup
1 can (10 Oz. Size) Cream Of Mushroom Soup
1/2 cups Mayonnaise
1 Tablespoon Yellow Mustard
1- 1/2 Tablespoon Italian Seasoning (More If Preferred - Like Me!)
Salt And Pepper, to taste
1 teaspoon Fresh Squeezed Lemon Juice
1 teaspoon Soy Sauce
1 can (14 Oz. Size) Green Beans, Drained
1- 1/2 cup Shredded Cheddar Cheese
1 can French Fried Onions (about 6 Oz. Size)
3/4 cups Shredded Cheddar Cheese
8 cups Cooked Rice (More If Preferred)

Put the chicken breasts into a pot of boiling water and boil until they can be shredded with a fork (takes around 20-40 minutes depending on the size of the chicken breasts).

When done remove them from the water and shred the heck out of them using two forks!

While chicken is boiling, slice one onion and cook in olive oil a skillet on medium heat until soft and translucent (could take up to 15 minutes).

Preheat oven to 350 degrees F. In a large bowl combine: shredded chicken, sauteed onion, soups, mayo, mustard, seasoning, salt, pepper, lemon juice, soy sauce and 1 1/2 cup of cheddar cheese.

Mix well, drain the can of green beans and then gently fold them into the mixture.

Transfer the mixture into a pan (9x13 works perfectly) and sprinkle the french fried onions and cheddar cheese on top.

Bake in the oven at 350 degrees F for 20-30 minutes until the cheese starts to bubble and has speckles of golden brown goodness.

When the casserole is done, remove it from the oven and let it cool for 10 minutes and serve over rice.

***If you want your casserole to be creamier you can reduce the amount of chicken and add more cream soups.
