1 large bell pepper, cut into large chunks
4 medium potatoes, peel and cut into large chunks
2 large carrots, peel and cut into large chunks (optional)
1 (14 1/2 ounce) can diced tomatoes
olive oil
sage, to taste
oregano, to taste

Sprinkle chicken thighs with chicken seasoning.

In large skillet brown Italian sausage with a little olive oil.

Add chicken and sear skin to brown.

Drizzle olive oil into a 13 x 9 baking pan.

Place chicken and sausage in pan.

Throw onions, peppers, potatoes and tomatoes over and around the chicken and sausage.

Drizzle with a little more olive oil.

Sprinkle with desired amount of sage and oregano.

Cover very tightly with foil.

Bake @ 425 for 1 1/2 hours.
