Ingredients: 4 whole chicken breasts, halved and boned; 1 beaten egg; plain bread crumbs; oil or margarine; 1/2 lb. fresh mushrooms, sliced; 2 c. chicken broth; 2 Tbsp. cornstarch; grated Parmesan cheese; 8 oz. grated Mozzarella; pepper; 2/3 c. white wine

4 whole chicken breasts, halved and boned
1 beaten egg
plain bread crumbs
oil or margarine
1/2 lb. fresh mushrooms, sliced
2 c. chicken broth
2 Tbsp. cornstarch
grated Parmesan cheese
8 oz. grated Mozzarella
pepper
2/3 c. white wine

Dip chicken in egg, roll in bread crumbs, fry until brown on each side and arrange in shallow baking pan.

Saute mushrooms; add pepper, broth and wine.

Thicken with cornstarch (dissolve cornstarch in a little water before adding the mixture.)

Sprinkle 3/4 cup of Parmesan cheese over chicken; cover with 3/4 of the Mozzarella.

Pour sauce over chicken.
