Chicken And Sweet Potatoes

   Melt butter in 9x13 baking pan, while heating oven to 400u00b0. Meanwhile, put peeled, whole onions in a saucepan with sweet potatoes that have been peeled and cut into 1 inch thick slices. Add water to cover, bring to boil, let stand. Sprinkle chicken with salt and pepper, dip in egg mixture, coat with bread crumbs. Roll in butter and place in pan to form a layer. Tuck onions and sweet potatoes under chicken.
