3 c. chicken broth
3 large carrots, peeled
1 small onion, chopped
5 Tbsp. butter
2 Tbsp. flour
1/4 c. heavy cream
1 c. shredded Gruyere cheese
3/4 lb. fresh mushrooms
1 (15 oz.) can artichokes

Boil chicken with carrots and onion for 1 hour or until chicken is tender.

Remove chicken from broth; let cool slightly and separate meat from bones into large pieces.

Strain broth and skim fat.

Slice cooked carrots diagonally.

Melt 3 tablespoons butter; blend in flour and cook 2 minutes.
